Cheesecake
Makes two 10" pies (large colored glass)
Filling:
Mix:
1 kg cream cheese, diced and warmed slightly in microwave
4 eggs
1 cup sugar
2 tsp vanilla
Cookies:
Beat:
1 cup sugar
4oz (1/2 cup) margarine
2 eggs
Sift:
1/3 cup cocoa
1 2/3 cups flour
1/2 tsp baking soda
Mix together. Make 2 pans (13 x 18") of 12 cookies. Bake 10 min at 350ºF
Crust:
Mix in each pie pan:
8 cookies, crumbed
1/3 cup sugar
2 oz marg melted (with chocolate chips if desired)
Pat mix into crust shape. Pour in half of filling per pan. Bake 35 min at 350ºF. Cool at least 8 hours. Cover with your favorite fruit pie filing.
