This would work with ground beef too. We make biscuits for the picky eaters but if you don't want extra biscuits just cut the biscuit recipe in half.
Empanadas with Chili-cheese Sauce

Taco TVP filling

Mix and let sit:
2 cups TVP
2 cups boiling water
2 Tbs beef soup base powder

Sauté:
1 chopped onion
1 whole clove garlic peeled

When the onion is soft mash the garlic and add:
1 tsp cumin
1 tsp coriander
1/2 Tbs paprika
1/2 Tbs chili powder

When spices are well mixed and heated add the TVP. Simmer to reduce liquid.

Biscuit pastry

Mix well:
1 Tbs sugar
2 Tbs baking powder
5 1/4 cups flour
1 tsp salt
3/4 cup margarine (6 oz)

Mix in until just mixed:
1 3/4 cups milk
 
Divide dough in half. Divide each half into 12 pieces. Make 12 plain biscuits. With other half roll each piece out into 5" circles. Place about 2 Tbs TVP on dough, fold over, roll up edge and seal with a fork. Any left over TVP is added to sauce. Cook on 2 large baking sheets.

Bake at 375º for 15 minutes.

Chili-cheese sauce

Heat gently till cheese is melted in TVP pot:
left over TVP
1 cup salsa
1/2 can diced tomatoes
2/3 cup sour cream
1 cup shredded cheddar
