Green Potatoes
Scrub:
6 medium potatoes
Make shallow slits around the middle as if you were cutting the potatoes in half lengthwise. Rub melted margarine onto skins using just enough to coat potatoes but not enough to drip.
Bake at 350ºF for 60 min.
Microwave until tender:
3 stalks broccoli (16 oz)
Chop broccoli in small pieces. Cut the potatoes in half. Carefully scoop the insides leaving enough potato to hold the skin. Place insides in a bowl with the broccoli.
Add:
1/4 cup milk
3/4 cup shredded Cheddar cheese
1 tsp salt
1/8 tsp pepper
Mash until well combined. Fill skins.
Sprinkle on top:
1/4 cup shredded Cheddar cheese
Return to oven and bake about 10 min
